The perfect way to spice up your butternut squash!
Peel and cut butternut squash into cubes and set aside.
If you are using shrimp, peel and wash. Place the shrimp in a bowl filled with water and 2 tbsp of garlic powder and set aside for later.
Add chopped onions and oil into a pot and sauté on medium heat until onions are golden brown.
Add in bay leaves, cardamom, chili powder, garlic powder, turmeric and salt.
Add chopped butternut squash and sugar. Mix thoroughly every 5 minutes until slightly softened.
If using shrimp, drain out water and add into the curry when the butternut squash is almost completely soft.
Cover and cook on medium-low heat until the curry and shrimp are done.. Your butternut squash should be soft. Some pieces will melt into the curry and some will stay solid. This is how you know when it's done! Be careful not to over cool or the squash will become mushy and turn into soup.
Remove from heat and serve over your choice of rice!
