This farm to table salad is delicious and easy guaranteed to brighten any day with its flavorful chicken and colorful veggies!
Preheat your oven to 425°F.
In a bowl, mix together minced garlic, paprika, chili powder, onion powder, garlic powder, dijon mustard, mayo, red chili flakes, black pepper, Italian seasoning, olive oil, and salt to create a marinade.
Mix four chicken breasts with the marinade and place on a baking dish.
Using a knife, create multiple punctures on the breasts. Top with more seasonings of your choosing. (I used more red chili flakes, chili powder, black pepper, Italian seasoning, and salt.)
Bake for 35 minutes or until chicken is fully cooked.
While your chicken is baking, clean and prep your eggs, cucumbers, tomatoes, lettuce, kale, red onion, and avocado.
Once fully cooked, slice your chicken and assemble your salad.
Use or make a dressing of your choice. Enjoy!
